Pineapple with Dulce de Leche and Vanilla Ice Cream
(Serves 6)

•1 large pineapple
•1 pint super premium vanilla ice cream
•1 cup raspberries
•1 cup Dulce de leche sauce
•2 tablspoons cinnamon
Prepare grill. Cut off the top of the pineapple. Core the pineapple leaving
it in 1/3 inch thick rings. Oil the grill rack. Grill pineapple wedges,
on a lightly oiled rack, set 5 to 6 inches over heat until just charred,
about 2 minutes on each cut side.
Place pineapple rings on a small plate or shallow bowl. Place one scoop
of ice cream in the center of each pineapple rings, sprinkle with berries.
Drizzle dulce de leche sauce over the ice cream, sprinkle with cinnamon
and serve.
